WIld Strawberries and the Pegasus Scooter

Rick brought out my scooter today as we are finally in weather conditions where we can ride it to work and save gas etc....I had to follow him to the gas station and he had an area where the scooter stalled.  Much to our delight we could immediately smell wild strawberries....so I made it my mission to go back and pick for the afternoon.  I have washed them and will dry them on paper towels and these precious vitamin c packed goodies will be frozen for smoothies this winter!

Mango Salsa and Fresh Cucumber and Tomato Salad


Tonight's dinner was a pleasant surprise with using Romaine lettuce salad wraps with fresh mango salsa.  Rick has mastered the art of cutting the mango and right now in the grocery store, the mangos are huge and $1 a piece.  Added to the salad was celery, tomato, orange pepper and mango.  We did not add cilantro or corn although both would be good.  We used the Romaine leaf as our "taco".  Fresh cucumber and tomato salad was our side with some rice vinegar and a little bit of Newman's dressing.  Rick has hinted we will go to Bruster's for ice cream but I told him....We must be strong....so we opted for some watermelon instead!

Day 5 of 30 days Raw

Well we are on day 5 of 30 days raw. So far I think it has been pretty easy for both of us. We are making all kinds of different smoothies and doing really nice salads. Last evening Martha made her own hummus and I made us onion flat bread in the dehydrator. Yum they are both awesome! Plus I started some more sprouts. Put the hummus and sprouts on onion flat bread! Man is that good stuff!

Tried some crackers, and although they taste ok and taste real good with the hummus, they are too thin. I need to make my mix thicker by adding more carrot or maybe ground flax or ground sunflower seeds. Will give that another go here this weekend.

I think mango salsa is in our future! If I make it I will post some pictures and the recipe!

Vegan Sushi

Sushi 002 Anyone that knows me is going to say, “You ate what?!?! Seaweed!?”  Martha is the sea food girl, I have always disliked it. Mainly because I can not stand that strong fishy smell. And now here we are with vegan sushi,  cucumber, carrots, celery, sprouts, yellow pepper and sweet peas wrapped in a nori wrap (seaweed) and served with a rice wine vinegar dipping sauce. My daughter is going “no way you ate that” right about now. But to my surprise, it was good. The wraps do have a slight ocean smell/taste to them but not bad. Not bad at all. And so my food explorations go on…

Vitamix Smoothie Mania

We got our Vitamix Tuesday and we have been blending up a storm! Wow is this thing powerful! We loved juicing but we had so much pulp to compost. With this we have next to nothing! Nice! We both feel pretty awesome eating raw.

It has been fun for me searching the web for recipes to help keep it all interesting and diverse. There are a few foods I will miss and finding replacements for them help keep me raw.

Bucket of Beans and garden update

Our “bucket of beans” is doing well! Grew a foot while we were on vacation! And our “bucket of carrots” is also doing pretty well. The new raised bed is also looking good. It is exciting to have all these things growing. We look forward to our first garden salad from our own garden!

You will notice I added Ani Phyo’s books to our amazon list on the left side of the blog. While we were away we had the chance to use Ani’s book and loved it! Loved it so much we got the kindle version of the Ani’s Raw Food Kitchen. Awesome! Check out her other books as well!

We got back from vacation to find our garden has grown a fair bit. We will do a garden update here in the next couple of days. Stay tuned!
